After a successful first pop up in Berlin Cafe, Dublin 2, Centime Markett is popping up again on August 4th, this time with a ‘Flavours of Spain’ menu. Run by passionate food duo Etienne Pittion and Mark Kelly, the food features local producers where possible.

One of the producers featured on the menu is Knockalara cheese, which hails from West Waterford. The family run business has been in operation since 1990, milking their own flock of Friesland Sheep and turning their milk into a delicious range of critically-acclaimed hand-made cheeses.

The full menu is as follows:

Salted almonds with a glass of ‘la gitana’ fino sherry
Heirloom  tomatoes

Tuna tartare
Or
Broad beans, Knockalara Sheeps cheese, mint lemon oil on toasted sourdough

Gazpacho

Gem lettuce, anchovy and crispy bacon
Or
Heritage beets, beetroot jelly, burnt orange and chervil
