Summertime and fresh seafood go hand in hand which is why I turned to the part of the world who does some of the best summer food: the Scandinavians. We decided to go with a quick and easy dish that still contained all of the summer freshness we were craving. Skagen is the Scandinavian version of a prawn salad and since they are surrounded by the sea they have the freshest seafood right at their fingertips!

Recipe

4 cups of peeled, cooked, and de-veined prawns (chop into smaller pieces if you choose)
3 ½ cups sour cream
½ cup mayonnaise (substitute more mayo for sour cream for desired consistency)
½ cup red onion minced
½ cup dill, finely chopped
4 tsp lemon juice

Method

Combine all ingredients, leaving lemon juice for last, in a bowl and mix. Serve on toasted bread, crackers, or on a bed of lettuce. Eat as an appetizer or as a light main dish.
