American style pancakes are perfect for breakfast, they are light and flavoursome and soak up all that lovely maple syrup! I have tried and tested many pancake recipes, but this recipe from Nigella Lawson is by far the best. Most recipes for american style pancakes use buttermilk, which I find I never have in the fridge but this is a simpler recipe so you can whip them up at any time without having to make a run to the shop!

Ingredients (makes 15 small pancakes)

1 tablespoon baking powder
1 pinch of salt
1 teaspoon white sugar
2 large eggs (beaten)
30 grams butter (melted and cooled)
300 ml milk
225 grams plain flour
butter for frying

Method

1. Mix all of the ingredients together with a hand mixer or food processor.

2. Heat a smooth pan and melt some butter.

3. When cooking, make sure you only turn once you see bubble appearing on one side. They take about 1 minute on each side, roughly.

4. These pancakes are also great reheated- simply put them in a hot oven for about 10 minutes!
