Quinoa is a complete protein which means it contains all of the essential amino acids so this will keep you full for hours. This simple and healthy porridge is gluten free, refined sugar free, dairy free, and absolutely delicious. Some almond milks have a lot of hidden sugars, so make sure you get a non sweetened version.

Quinoa Porridge

Ingredients (Makes 1 portion, double recipe as required)

  • 1 cup quinoa
  • 1 cup water
  • 3 cups almond milk
  • 3 tbsp honey
  • 1 tsp cinnamon
  • 1 Peach, diced
  • 5 strawberries, diced

Method

  1. Bring water and 2 cups of almond milk to the boil, add the quinoa and simmer for 10 minutes.
  2. Add the remaining almond milk along with the honey and cinnamon and continue to simmer at a low heat for a further 5 minutes (you may need to add more milk if it’s getting too dry).
  3. Add the peach and strawberries and serve with a drizzle of honey.

TIP: This also reheats very well, just add a dash of milk before reheating and enjoy!
